KVS Options
When using Kitchen Video Screens (KVS) there are a couple different options on the way that it can be set up. And its all dependent on how your cooks like to run the kitchen
Option #1 – Full Automation (preferred method)
- There is no wheel screen. All stations have their own “To do list” of what to cook and they only see what they need to cook when they need to cook it.
- With this option cook times MUST be entered in, and it might be a good idea to consider prep time, since that time determines when it's sent to a station.
- When everything on the ticket is finished, it turns bright green on expo and moves to the front, so they know it is completed at all stations
Option #2 – Traditional Wheel Screen
- There is a “wheel” guy who manually sends items to the side stations. He would oversee the timing of when things get sent to the side stations.
- Putting cook times* on items is optional, but a good idea to help side stations know how long an item needs to cook for. (With this option I'd set cook times to actual cook times, not including preparation)
- If you do not put on cook times, the items will come to the kitchen in the order they were ordered, if you put cook times on, it will order by longest cook time on top.
- Then the wheel guy bumps the ticket to the expo side when he sees all the items are finished
Option #3 – Hybrid – Traditional Wheel Screen, with Auto Send
- Everything is auto sent to the side stations (like #2). The wheel screen is there so the main cook can see the full tickets.
-
The wheel screen also works as a station where they fire and finish items just like the side station.
Option #4 – Digital Tickets
- The screens are there just to display the tickets
