KVS Options

When using Kitchen Video Screens (KVS) there are a couple different options on the way that it can be set up. AndHow its allset dependentup depends on how your cooks like to run the kitchen

kitchen.

Here are the main options:

Option #1 – Full Automation (preferred method)

  • ThereNo wheel screen is noused.
  • wheel
  • Each screen.station Allhas stations have theirits own side stationscreen showing a “ToTo-Do do list”List” of what to cook and they only seethe whatitems they need to cook and when they need to cook it.them.

  • When everythingall items on thea ticket isare finished, it turns bright green on the expo screen and moves to the front, sosignaling they knowthat it is completedcomplete at all stations stations.

 

 

Option #2Traditional Wheel Screen

  • There is aA “wheel” guy whocook manually sends items to theeach side stations.station. HeThey would oversee the timing of when things get sent to the side stations. 
  • PuttingCook cooktimes times* on items isare optional, but arecommended good idea to helpso side stations know how long aneach item needs to cook for.takes.
    • WithCook thistimes optionshould I'dreflect setactual cook times toonly, actualnot prep time.
    • Items without cook times,times not including preparation
    • If you do not put on cook times, the items will come to the kitchenarrive in the order they were ordered,entered; if you putwith cook timestimes, on,items itare will order bysorted longest cook time on top.first.
  • Then theThe wheel guycook manually bumps the ticket to the expo sidescreen when he sees all the items are finished at their stations.

 

Option #3 – Hybrid – Traditional Wheel Screen, with Auto Send 
  • Everything is

    Items autoare automatically sent to the side stations (like Full Automation (#1). The wheel screen is there so the main cook can see the full tickets.

  • The wheel screen allows the main cook to see the full ticket.

  • The wheel screen can also worksact as a stationside station, where theyitems fireare fired and finish itemsfinished just like the sideindividual station.station screens.

 

Option #4 – Digital Tickets
  • The screens

    Screens are thereused justonly to display the tickets

  • In this situation, they probably just need the Expo screen set up because they don't need to send items.tickets.

  • They just

    Typically, needonly tothe seeexpo screen is needed.

  • The kitchen sees the ticket and bumpbumps it off when itscomplete, donebut items are not sent to individual stations.
